"Millionaire Spaghetti" Squash Casserole

I adapted the delicious Millionaire Spaghetti deal into a spaghetti squash recipe and it was incredible.

Millionaire Spaghetti Squash
(Adapted from here

1 ginormous Spaghetti Squash or 2-3 small ones.  
1/2 large yellow onion , Chopped 
1/2 Red pepper, diced  
4-6 Cloves Garlic , Minced 
1 Pound Ground turkey or italian sausage 
3 teaspoons Dried Italian Seasoning , divided 
1 24 Ounce Jar spaghetti sauce 
8 Ounces Cottage Cheese or Ricotta Cheese 
8 Ounces Cream Cheese, Room Temperature 
1/4 Cup Sour Cream 
3 Cups Mozzarella , Shredded-Divided 

1. Preheat the oven to 400 degrees. Split spaghetti squash lengthwise and scoop out the seeds. Brush with oil then place cut-side down on a foil-lined cookie sheet. Bake for 45 minutes or until tender. Remove and allow to cool enough to handle. Lower oven temp to 350 degrees.

2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add onion, peppers and garlic and cook until they begin to soften, about 5 minutes. Add meat and 2 teaspoons Italian Seasoning to skillet, and cook until no pink remains. Drain well. Add jar of spaghetti sauce to skillet. Set aside.

3. In a medium mixing bowl, combine Cottage cheese or ricotta cheese, cream cheese, sour cream, 1 cup mozzarella, and 1 teaspoon Italian seasoning. Set aside.

4. Grease a 9x13 casserole dish. Use a fork to scrape the strands of spaghetti squash into a bowl--drain well if necessary. Put half the spaghetti squash into the bottom of the greased casserole dish. Top with a very small amount of the meat sauce mixture and stir. Resettle the spaghetti squash evenly and then top with the cheese mixture. Cover the cheese mixture with the remaining spaghetti squash, and then cover the entire dish with the meat sauce. 

5. Top with remaining mozzarella and bake at 350 degrees for 35-45 minutes or until heated through.

Crack Slaw

I don't know why this is called "crack slaw" but it is. I just think of it as "that super yummy and easy stir fry stuff with sriracha."

1 lb. ground Turkey
2 tablespoons of extra virgin olive oil
Hearty sprinkling of garlic powder
2 tablespoons of diced onions
16 oz. bag of coleslaw mix  (or 16 oz of shredded cabbage)
Optional: Sliced mushrooms, green peppers, celery, zucchini, etc.
3 tablespoons of liquid aminos OR soy sauce
2 tablespoon sriracha
Salt & pepper to taste

1) Brown ground turkey and season with salt, pepper, and garlic to taste. Remove from pan and set aside.
2) Saute onions, cabbage, & garlic in olive oil & cook until the tenderness you prefer. If adding more veggies in, do it now!
3) Add in liquid aminos, sriracha, salt & pepper
4) Add meat back into the veggies & mix well

We usually eat this with a little bit of white rice and extra sriracha!

Spaghetti Squash Bolognese---from Bob Harper!

You guys. YOU GUYS! This is good. You know how you sometimes make healthy stuff and it tastes healthy, but not in a great way? This isn't that stuff. It tastes so good!  Try it. Really really.

Spaghetti Squash Bolognese
(Adapted from Bob Harper)

Ingredients
16 ounces ground turkey breast
1 cup sliced celery
1 yellow onion, finely chopped
1 24-26 oz. jar of spaghetti sauce (I used Ragu)
4 cups spaghetti squash strands--or just use one large-ish spaghetti squash
5-6 cups chopped fresh spinach (Really, just use as much as you'd like)

Directions
Cut your spaghetti squash lengthwise and scoop out the seeds. Place both pieces cut side up on a dinner plate. Cover with plastic wrap and microwave on high for 8 minutes. Let them steam/cool for another 5-10 minutes. Then use a large spoon to scrape out the strands into a large bowl. Set aside. (You can even do this step in the morning and leave it in the fridge)

Combine turkey, celery, and onion in a large pot on medium-high heat. Sauté for 8 minutes, stirring occasionally to break the turkey apart.

Add the spaghetti sauce and simmer for 20 minutes. Mix in the spaghetti squash (which will warm through from the heat of the sauce). Turn off the heat, add the spinach, and stir until wilted.

We served it with some bread on the side. Delicious!

Favorite Hamburger Casserole

1 lb ground turkey (you can also use beef, I just prefer turkey)
1/2 onion chopped (or 2 T dry minced onion)
1 t. chili powder
1/2 t. cumin
1 t. oregano
1 t. salt
1 can tomato soup
9 oz. egg noodles
grated cheese

Brown ground turkey with onion. Add tomato soup and 1 can water. Add seasonings and simmer 15 minutes. Cook noodles according to package directions. Arrange in greased 9x13 casserole dish: half of noodles, half of beef mixture and cheese. Repeat layers once. Bake at 350 degrees, covered, for 25 minutes.
